
Soup season is in full swing! The holiday season is amongst us, too, so quick and easy weeknight dinners are what we all need. This Sausage and Gnocchi soup is a one-pot recipe and can be versatile – use whatever you have in your pantry! You’re noticing a theme here, aren’t you? I love utilizing what I already have instead of making extra trips to the grocery store each week.
This recipe makes enough to serve 4-5 people, but it’s very easy to double if you’d like to have leftovers or serve for a gathering!
Ingredients:
- 16 oz Italian Sausage/Ground Pork
- 16 oz Gnocchi
- 1 cup Heavy Cream
- 1 quart Chicken or Vegetable Broth
- 10 oz fresh or frozen Butternut Squash (cooked)*
- 6 oz Tomato Paste*
- 2 tbs Garlic powder (or 3 minced garlic cloves)
- 2 tbs Sage (fresh or dried)
- 2 tbs Thyme (fresh or dried)
- 1 tbs Olive Oil
- Salt and Pepper
*Note: As mentioned previously, I have swapped ingredients and you can, too. In place of the Tomato paste and/or Butternut Squash, I’ve used the Autumnal Harvest Soup from Trader Joe’s as the base. You could also use the Butternut Squash soup from Kroger. If you’ve never had this Roasted Red Pepper and Tomato soup – highly suggest!! That, with sourdough grilled cheese, is a staple dinner on rotation in our home.
Instructions:
1.) In a large pot, add olive oil and turn to medium heat.
2.) Add sausage/ground pork and brown.
3.) Add your seasonings (Garlic, Sage, Thyme, Salt and Pepper)
4.) While the meat is cooking: In a blender, combine the tomato paste with the cooked butternut squash, and about 1 cup of the broth. The mixture with be thick without liquid and will not blend without it. You can also use 1 cup of water. Add more if needed, until blended.
5.) Once the meat has cooked through, pour the tomato + squash mixture into the same pot with the sausage. Let simmer for about 15 minutes.
6.) Add in the gnocchi and follow the cooking instructions. Most pre-packaged gnocchi only require a few minutes of boiling.
7.) Next, add the heavy cream and stir. I will let this simmer on low for just a few minutes before serving with sourdough bread cut into pieces for dipping!
